Tonight, I'm cooking one of my all-time favorite dish, pinakbet. Pinakbet is a classic Filipino dish that features vibrant vegetables like squash (kalabasa), okra, eggplant (talong), string beans (sitaw), bitter melon (ampalaya), and tomatoes, all brought together with the savory goodness of shrimp paste (bagoong alamang).
Here's how I cooked it:
I sautéed garlic, onion, and tomatoes until aromatic, then stirred in the shrimp paste to deepen the flavor. All the vegetables went in at once, as they were evenly cut for similar cooking times. To balance the flavors, I added a touch of pepper and sugar, then poured in a little water and let everything simmer until the veggies were tender yet vibrant.
Pinakbet isn't just a nutritious and delicious dish, it's comfort food that reminds of home.
