Vitamin C
From the 1930s, Dr. Albert Szent-Györgyi researched the reaction delay of an oxidation process, from which he concluded that this indicated the presence of some reducing substance. He noticed that this substance occurs in both the adrenal cortex and citrus fruits, and it became known that human cells need this substance, but only plants and animals can produce it. Apart from humans, there is one more species whose body cannot produce vitamin C, and that is the guinea pig. Under interesting circumstances, Szent-Györgyi realized that green peppers contain much more of this substance than citrus fruits. According to the legends, he hated paprika, and one night when his wife added a piece of paprika to the dinner, instead of arguing like a routine husband, he put it in his coat pocket in a careless moment. He ate his dinner, then went down to his laboratory, and after trying many other vegetables and fruits without success, having nothing to lose, he took out the pepper that had escaped from the dinner, and set to work. He supposedly had the solution in hand that night. He knew he had found a vitamin C gold mine. After the previous small, insignificant quantities, he was able to produce several kilos at once. He discovered that it could be used to cure scurvy, so he named it ascorbic acid. In 1937, he received the Nobel Prize in Physiology or Medicine for his research on vitamin C. Nowadays, the importance of vitamin C is primarily due to its antioxidant and cell-protective effect.
