Post layoff meals! This is dinner tonight Would love to see your recipes!
I’ve recently found myself laid off for the first time in my career and obviously I’m making adjustments to spending habits. I’m trying to get creative with more frugal meals.
This is what I came up with. The sweet potatoes will be roasted on the side and then the rice will be added in during the last 30 minutes, but everything else is going into my slow cooker.
I’m hoping this feeds us for at least three days for dinner, if I can stretch it to four that would be great, but I’m not very hopeful.
Would love to see anybody else’s recipes for high protein, frugal meals!
