Budget meals with complete nutrition

So I am trying to pay off some debt I have and I have been cutting out as much unnecessary expenses as possible. One of my big money sinks is food so I’m cutting out fast food and restaurants in general as much as possible and I’m also cutting out pretty much any “luxury food” or foods I don’t actually need.

My concern is nutrition.

I want to have the cheapest possible meal plan that I can without missing out on essential nutrients that might do harm to me in the long run.

I know rice and beans is a really good budget option which I am fine with and I’m also fine with eating the same thing often to save money but I know I can’t survive on just rice and beans because you need vitamins and what not and minerals. So my question is what else could I add to the rice and beans and to maintain full nutrition. (Also I am diabetic so I can’t eat a lot of sweets and the like)

I’ve heard that spinach is one, also canned beets, potatoes, etc.

Any advice will do.

TLDR: what is a full nutrition plan that is ultra cheap but will give me the nutrients I need to not die or develop health issues from not getting everything I need.
