Serves 6 · Total time: 30 minutes, using boneless chicken and two large frying pans.
You’ll need: 900 g boneless chicken, 1.2 kg potatoes, 1–2 green chilies, 3 tablespoons oil, ½ cup water, salt and pepper.
First, dice the potatoes into 1 cm cubes. Put them in a covered microwave-safe bowl with the water, leaving a vent. Microwave on high for 8–10 minutes, stirring halfway, until nearly tender; drain carefully.
Next, while the potatoes cook, cut the chicken into small, even pieces on a separate board. Wash hands and utensils afterward. Finely chop the chilies, removing seeds for milder heat.
Then, divide the oil and chicken between two hot pans. Season and cook for 6–8 minutes, turning occasionally.
Finally, add the potatoes and chilies. Cook for another 5–7 minutes, stirring, until the potatoes are tender and the chicken reaches 74°C (165°F) in the thickest pieces. Keep some portions chili-free if preferred.
Substitution: swap green chilies for sweet bell pepper if available for a gentler version.

Serves 2. Total time: about 10 minutes with ready-to-eat bamboo shoots and a hot pan.
Ingredients: 200 g ground pork, 200 g squash, 100 g drained canned or previously cooked bamboo shoots, 1 tsp oil, 2 tbsp water, and salt and pepper to taste.
First, check the shoots: fresh raw bamboo needs proper preparation and thorough cooking to reduce naturally occurring toxins; a quick stir-fry isn’t enough. Use canned shoots for this version, or substitute extra squash.
Start by cutting the squash into very thin, small slices and slicing the ready-to-eat shoots.
Next, heat the oil in a wide frying pan over medium-high heat. Add pork and break it into small crumbles; cook for 3–4 minutes, stirring.
Then add squash, shoots and water. Cover for 2 minutes, then uncover and stir-fry for another 1–2 minutes.
Finally, check that the pork reaches 71°C/160°F and the squash is tender; cook longer if needed. Season with salt and pepper. 🍽️

Serves 2. Total time: 25 minutes. Ingredients: 300 g chicken breast, 1 medium onion, 1½ tablespoons soy sauce, 1 tablespoon oil, 3 tablespoons water and a pinch of pepper.
First, thinly slice the onion. On a separate board, cut the chicken into strips about 1 cm thick; wash your hands and clean utensils after handling raw chicken.
Next, heat the oil in a large frying pan over medium-high heat. Cook the onion for 5–6 minutes, stirring, until softened and golden at the edges. Transfer to a plate.
Then, add the chicken to the pan in a single layer and cook for 6–8 minutes, turning occasionally. Return the onion, add the soy sauce, water and pepper, and simmer for 2–3 minutes. Check that the thickest chicken pieces reach 74°C; cook longer if needed.
Finally, let the sauce reduce briefly until it lightly coats everything. Taste before adding salt—the soy sauce brings plenty! 🧅
Substitution: swap the onion for 2 shallots if available.

You’ll need 4 slices of loaf bread, 100 g cheese (grated or thinly sliced), 150 g sausage, and 1 teaspoon oil. Have 2 tablespoons water handy.
First, cut the bread into bite-sized cubes, prepare the cheese, and crumble or finely chop the sausage, removing any inedible casing.
Next, heat the oil in a large frying pan over medium heat. Add the sausage and cook for 7–10 minutes, stirring and breaking it up. Raw pork or beef sausage should reach 71°C/160°F; chicken or turkey sausage needs 74°C/165°F. Allow extra time if needed. Transfer to a plate.
Then, add the bread to the pan and toast for 3–4 minutes, turning until golden. Leave just a little sausage fat in the pan for crisp edges.
Finally, return the sausage, scatter over the cheese, and cover for 1–2 minutes until melted. If needed, trickle the water around the pan’s edge to help create steam.
Substitution: use 150 g cooked beans instead of sausage, warming them through before adding the bread.

You’ll need 400 g potatoes, 1 small onion, 1 tablespoon oil, 80 ml water, salt and pepper.
First, scrub the potatoes and cut into small, 5 mm cubes; thinly slice the onion. Small pieces are key to the timing.
Next, heat the oil in a wide skillet. Add the onion and potatoes, then stir for 2 minutes.
Then, add the water, cover and cook for 7–8 minutes, stirring once, until the potatoes are tender. Add a splash more water if needed.
Finally, uncover and fry for 2 minutes to dry and lightly color the edges. Season to taste. 🍳
Substitution: replace the onion with another 100 g of finely diced potato.
