Why do I feel like every recipe calls for too little garlic? Before I start: I like balanced dishes, and my least favorite thing is when a dish has an ingredient that makes it taste like that thing only (looking at you, balsamic vinegar). Maybe some people feel this way about garlic given that it is a strong flavor. That being said, I know garlic is strong, but I find myself at least doubling the amount of garlic in most recipes I find. 1 clove for 3 quarts of soup? 2-3 cloves for a big pot of all-day tomato sauce? Come on! I feel like if I’m adding garlic to any dish, very generally, I’m using three cloves minimum (exceptions might include a compound butter or something where you’re yielding a smaller quantity.) A pot of soup probably has at least 6, a pot of tomato sauce maybe 8. Did garlic cloves used to be bigger and the recipes haven’t adjusted? Are there just a lot of bland recipes out there? Or is it just something with my palate? Fwiw, my wife and I both feel this way and most everyone we’ve served really likes our food (and I trust that they’re people that would say something if they didn’t). I’m curious if other people find themselves doing this or if it’s just a me thing!
