Moroccan Chicken with Preserved Lemons and Olives is one of the most famous dishes in Moroccan cuisine, and this festive version with a silky onion sauce called daghmira is especially popular. The secret to making a proper daghmira is to reduce the onions patiently and slowly until they no longer are identifiable as onions. Once you achieve that consistency and add the preserved lemon and olives, you’ll understand why daghmira is so well-loved by all who taste it.

Villa Yves saint laurent in marrakech: Yves Saint Laurent was thirty years old when he first went to Morocco, accompanied by his lifelong lover, Pierre Bergé. He immediately fell in love with the country for its culture, its colours and its setting: he said "Marrakech, for me, is paradise". His visits were very frequent, up to twice a year, without any weariness. His last wish was to permanently reside in the city since his ashes were deposited in the heart of the Majorelle Garden. In 1974, Pierre Bergé and Yves Saint Laurent acquired Dar Es Saada. In 1980, they learned that the nearby Jardin Majorelle was threatened by a real-estate development project and decided to acquire the garden and adjoining villa, which had belonged to the painter Jacques Majorelle. Together, they restored the garden and created a museum of Islamic art designed by Bill Willis in Majorelle’s former studio. In 2011, the museum was converted into a museum of Berber art.

Deserts, steppes and wild animals are probably the first thoughts people associate with Morocco. Hardly anyone thinks about skiing. This is Oukaimeden - On a clear day, skiers can see the dunes of the Sahara desert shimmer in the distance from the Moroccan ski resort of Oukaimeden, the highest in North Africa.

Have a break & go to the Hammam! Traditional Moroccan hammams are bath houses Moroccans frequent to clean their bodies, purify their souls, and truly be themselves. Moroccan hammams take their inspiration from the first original bathhouses created by the Roman empire more than 2000 years ago, built to increase public hygiene. The ancient bathhouse rapidly grew in Islamic Moroccan culture with a few modifications that made it unique and different from others. Traditionally, Moroccan hammams are located near mosques to facilitate the purification of body and soul before prayers rituals.

A tagine is an important part of Moroccan cuisine and has been a part of the culture for hundreds of years. The word tagine actually has two meanings. First, it refers to a type of North African cookware traditionally made of clay or ceramic. The bottom is a wide, shallow circular dish used for both cooking and serving, while the top of the tagine is distinctively shaped into a rounded dome or cone. Second, the word tagine also refers to the succulent, stew-like dish which is slow-cooked in the traditional cookware. Typically, a tagine is a rich mixture of meat, poultry, or fish, and most often includes vegetables or fruit. Vegetables may also be cooked alone in the tagine.

You say you don’t like olives? Have you tasted a Moroccan olive? They come in a rainbow of colors and flavors, from the creamy greens to the salty, cured black signature olives of Morocco.Or maybe you would like to try the mixed variety. Red and green olives, tossed in local fruity olive oil, parsley, cilantro and red pepper flecks. You might get away with only trying one but I assure you that you will be back for more. You might as well buy a full kilo because once you try one you will want more.
