How do you figure out how much water to bring on a hike?

Been getting into hiking over the past few weeks and now going out most weekends. The one thing I still cannot get right is water. Some hikes I bring too little and end up getting back to the car or bus feeling super thirsty. Other times I play it safe and bring way too much which means carrying a lot of extra weight for hours. As a beginner that gets old fast especially on trails with a lot of climbing. I know weather and elevation probably make a difference too but I am still trying to figure out a simple way to estimate what I actually need before heading out.

How do you guys decide how much water to carry based on the length of the hike? Do you use a rough amount per hour or just learn from experience? Also curious about electrolytes. I keep hearing they can help with hydration and recovery but I have never used them before. Are they worth bringing on regular weekend hikes or mostly useful for longer and hotter days? If you use them what do you look for and are there any brands or types you would recommend for someone trying them for the first time?

For hikes, I use a rough rule of 0.5 liters per hour plus extra for heat or elevation. What kind of terrain are you usually on?
