How do I politely let a coworker know that he talks to me a bit too much?

There is a guy I work with who comes and sits next to me every single day at lunch and talks to me my entire lunch break. I don't mind talking to him occasionally, but some days I would prefer to eat lunch alone or socialize with other coworkers.

Also, the conversations sometimes get quite uncomfortable because he is constantly dropping hints that he is into me, but I am not at all into him. Nothing egregious or inappropriate; it's stuff like inviting me to his gym, constantly dropping hints about being single, and inviting me to go places after work. He is always trying to steer the conversation toward my personal life and every time I try to steer the conversation away but he doesn't get the hint.

It's gotten worse recently and he has started coming up to me during work hours too and trying to start up a conversation then. We have an open office floorplan/culture so this isn't something uncommon and he's definitely not the only one doing this. The difference is that most people stop by to chit-chat once or twice a week but he is the only one who does it for 20+ minutes every single day!

I don't know how to stop it. Do I just pretend I'm busy 4 out of every 5 times he asks? How do I politely let him know that he is taking up way, way, way more of my time than I would like him to? I'm not good at setting boundaries, help!
