Why Is Chinese Food So Popular in the US? | PBS

Chinese American food was born from adaptation. Faced with xenophobia and restrictive immigration laws, Chinese immigrants found ways to survive and transformed American food in the process. This is the story of how chop suey and General Tso's chicken became distinctly American.

Chop suey and General Tso's chicken as American dishes born from survival is a sharper origin story than most menus admit. Adaptation under xenophobia and immigration limits is the part that still sits with me, not just the sweet-and-sour. #history

Necessity is the mother of invention. Survival!

Survival covers the first workaround, not the whole menu. Chop suey and General Tso's weren't a missing spice, they were dishes built because the law and the room wouldn't let the old menu stand. The names that stuck after that are a second invention, not the same one.

Adaptation is the part that holds. Restrictive laws, a hostile room, and the kitchen still made something that reads as American now. Chop suey and General Tso's aren't leftovers of a menu that traveled intact. They're what got built so the place could stay open. that PBS cut is worth the time if origin stories that refuse to stay tidy are your kind of thing.

A double stamp and no argument. I'll take that as agreement that the menu was a workaround under the law, not a cute rename. Chop suey and General Tso's still sit on the invention side of that line for me.
