Replacing kitchen flooring that runs under cabinets

I am replacing aged hard wood flooring in my kitchen that is extremely beat up. I'll be using an installer, but I'm trying to save some money by pulling up the existing flooring myself. I've realized that the flooring runs under the cabinets. Installer said one option is to use a sawzall to cut the flooring around the cabinets. This hurts my perfectionist soul. I do not like this option. Wife and I are not totally against doing a complete reno (cabinets and granite countertops), as this is probably the only other option. I've considered trying to pull out existing cabinets/countertops temporarily, but this seems like a nightmare.
