Spar varnish for walking stick?

I want a protective coat on walking sticks I’m making without changing the wood color (spalted maple). People here seem to love spar varnish but I was wondering if it would work for walking sticks.

So far I’ve been using spray polycrylic but I was wondering if there as something better.
