If you want a good source of plant protein, tofu is pretty much the only option. And the idea of tofu is genius. You get soybeans then you remove the pulp (which is hard to digest), then you coagulate the result and get a block of pretty much pure plant protein. For plant-based protein, nothing else even comes close. Obviously, you could just eat the beans, but you would have to spend some energy digesting them and the fiber so it’s not really that close.
I would argue that the reason china was able to maintain such a huge population throughout history was because they didn’t have to harvest wild amounts of animal protein and they had tofu for their population’s protein needs. Basically, you’re able to feed everyone at a much higher efficiency with tofu.
It tastes relatively neutral with only the aroma of beans, so it’s a versatile food as well, it can be eaten cold, warm, in a soup, pan fried, deep fried, in a big stir fry with lots of sauce or on its own, as a dessert, even as stinky tofu. Even nowadays it’s cheaper than animal protein.
It’s highly likely if we run into a meat shortage crisis in the future, humanity will have to turn to tofu again. #conversation
