What's the Scoring System for Reviewers?

They just put a number depending on how they enjoyed/despised it or do they actually have a system for it?

I see pages like IGN, Gamespot and other reviewers who put a number to their review. They do have good points to criticize the game. But how do they decide the number of the score?

Is it like... "hmmm, this made me feel this way, so it's a 7 out of 10" or do they have like a system, QA type of thing, where they score certain categories of the game and at the end that gives the final score?

I've always loved the idea of reviewing video games and recently started thinking it seriously, but idk if I'm overthinking it by having like a QA sheet from the consumer perspective. I'm curious to know the logic about how those websites and reviewers do it.
