Serves 3–4 | Total time: 15 minutes
Ingredients: 2 cups shredded rotisserie chicken, 1 cup peas, 2 cups herb stuffing mix, 1½ cups water, 1 tablespoon oil, plus salt and pepper. Optional: ½ cup diced onion if you have it.
1. Warm the oil in a large skillet over medium heat. If using onion, cook it for 2 minutes until softened. 2. Add the water and bring it to a simmer. Stir in the stuffing mix, cover, and cook for 3 minutes. 3. Fold in the chicken and peas, cover again, and cook for 5–7 minutes, stirring once, until the peas are hot and the chicken is steaming throughout. 4. Season with pepper and a little salt, then fluff and serve.
Substitution: Frozen peas work well; add them straight from the freezer and give the skillet an extra 2 minutes. If the mixture seems dry, stir in a splash of water. Is your stuffing mix especially seasoned, or fairly mild?
