Dish potato rice
Today for lunch, I made Aloo Pulao (Potato Rice), a simple yet comforting dish that is full of flavor. The long-grain basmati rice is perfectly cooked with soft, tender potato pieces and lightly spiced to give it a warm, homely taste. I served it with a fresh side salad of sliced cucumber, onions, and tomatoes, which added a nice crunch and freshness to the meal. A small portion of tangy pickle on the side completed the plate, making this lunch both satisfying and wholesome.
Aloo Pulao (Potato Rice) Recipe
Ingredients:
Basmati rice – 2 cups (soaked for 30 minutes)
Potatoes – 3 medium, cut into large cubes
Onion – 1 medium, thinly sliced
Tomato – 1 small, finely chopped (optional)
Green chilies – 2, slit
Ginger-garlic paste – 1 tablespoon
Whole spices:
Bay leaf – 1
Cloves – 3–4
Green cardamom – 3
Cinnamon – 1 small piece
Cumin seeds – 1 teaspoon
Red chili powder – 1 teaspoon
Turmeric powder – ½ teaspoon
Salt – to taste
Oil or ghee – 4 tablespoons
Water – 4 cups
Fresh coriander – for garnish
👩🍳 Method:
Heat oil or ghee in a pot or pressure cooker.
Add cumin seeds and whole spices; sauté until fragrant.
Add sliced onions and fry until golden brown.
Add ginger-garlic paste and green chilies; sauté for 1 minute.
Add potato cubes and cook for 2–3 minutes, stirring well so they coat with the spices.
Add chopped tomato, red chili powder, turmeric, and salt. Cook for a few minutes.
Add soaked and drained rice; gently mix for 1 minute.
Add water and cover with a lid.
In a pressure cooker: cook for 1 whistle.
In a pot: cook on medium heat until the water is absorbed.
Once the rice is cooked, place on low heat (dum) for 5 minutes.
🍽 Serving Suggestion:
Serve hot Aloo Pulao with fresh cucumber-onion salad, raita, and pickle for a complete and satisfying meal.
