Starting from Scratch- The Ultimate Beginner

Like my title says I am starting from complete scratch with any knowledge about gardening, but I am SO interested in learning. I'm feeling a little in over my head with my research right now and I really don't want to miss some of the sowing dates for my area so I really need help nailing down a game plan. Just for reference I'm in zone 8a (North Texas), and primarily want to have a kitchen garden. Right now I have seeds for Juliet Tomatoes (Johnny Seeds)-Celebrity Tomatoes (Johnny Seeds)- and Gardenary's essential seed starting kit which included Arugula-Bush Beans-Carrots-Cucumbers-Lettuce-Peas-Radishes-Spinach-Zinnias- and Zucchini. I know I'm really pushing it on starting the tomato seeds from what I hear, but my real question is this: how do I know how much of each seed I want/need to sow? So if I was going to go buy the seed starting trays and pack it with my soil how many cells would I assign to each? I'm sure it depends on how much I want in my garden, and how much space I have-but we'll be building the raised beds off of what I want to garden so how much space do I need? I hope I'm making sense, I'm probably severely overthinking it, so if anyone wants to break it down for me and give me a good jumping off point I would be SO appreciative.
