Fun Fact: Sushi Was Originally a Preservation Method
Most people think of sushi as a luxurious Japanese dish, but its origins are much humbler. Sushi actually started as a method to preserve fish ! In ancient Southeast Asia, people would ferment fish with rice and salt, keeping it edible for months. The rice was discarded, and only the fermented fish was eaten.
It wasn't until Edo-period Japan (1600s-1800s) that sushi evolved into the fresh, vinegared rice and raw fish combination we love today. The popular "nigiri" sushi we see now—hand-pressed rice topped with fresh slices of fish—was considered fast food at the time, sold by street vendors in Tokyo!
Modern sushi is now a global sensation, with everything from traditional toro (fatty tuna) to wild creations like sushi burritos and deep-fried rolls .
