new to phoenix , new to cockroaches

we just moved here from washington about a week ago, and tonight we saw our first cockroach in the kitchen. washington is rife with bugs, and every home i've ever lived in has come free with an infestation that i've had to handle (ants, moths, carpet beetles, millipedes, brown recluses, you name it). however, this is my first time ever encountering a cockroach, and i would love some advice on how to proceed!

the roach was a dark red colour, decent in size (i'd say maybe an inch long or so?), and it did not scatter or run away at all until we physically touched him (he was very fast!). i know you aren't supposed to squish them due to their egg sacs, so we picked him up in a sheet of toilet paper and flushed him. we checked all our cabinets and cupboards and didn't see any signs of infestation, but to be honest, i don't exactly know what to look for. we are on the ground floor of an apartment building, and while we are very clean people, i don't know that i can say the same about our neighbours. there is also a lot of cardboard here at the moment since we just moved. ​we are going to pick up some airtight containers for our non-fridge food items and cat food tomorrow, and i plan on switching my cats to a feeding schedule so no food is left out anymore​, but beyond that, i'm not sure what to do to keep them at bay or check for signs of infestation. i've always heard that with roaches, for every one you see, there are a hundred that you don't. i don't know how factual that is, but it's gotten me in a bit of a panic to say the least. i read that roaches are the most common house pest in arizona, but i don't know if that is a testament to futility or not lol

any advice from more seasoned phoenix residents would be greatly appreciated!
