Scotland/Ireland Itinerary Question/Review

Hello! I am taking my mom to Scotland and Ireland which has been a dream of hers since she was a kid. I don't have a ton of experience traveling myself (just a few US states), so I'm hoping I can get help reviewing our rough outline of our itinerary, and also the flight price I'm looking at.

We're looking to depart Grand Rapids MI on 9/23 and arrive in Scotland on the 24th (landing in Dublin first, then catching another flight to Glasgow).

I intend to rent a car in both Ireland and Scotland.

Scotland

Sept 24-25: Get to our hotel and then explore Glasgow a bit

Sept 25-27: Make our way to Skye while stopping at a few places (Loch Lomond, Glencoe), and exploring other things in the area.

Sept 27-29: Make our way to Loch Ness (checking out Corrieshalloch Gorge on the way), and explore the area.

Sept 29-30: Make our way to Iverness and the surrounding area

Sept 30 - Oct 1: Make our way to Edinburgh and stop by Cairngorms National Park on the way through.

Ireland:

Oct 1-2: Leave Edinburgh and explore Dublin

Oct 2-3: Head to Banbridge area and check out the Giants Causeway and other things

Oct 3-4: On to Galway area with a stop at Oweynagat Cave

Oct 4-5: Checking out the Cliffs of Moher on our way to Killarney/Dingle area

Oct 5-6: Heading to Kilkenny with some stops in the Waterford area

Oct 6-7: Visit Glendalough area and head on to Dublin to spend one last night before heading home

Does this itinerary seem reasonable for the amount of time we will be in each country? I was debating if one of the 3 days near Loch Ness/Iverness should instead be somewhere in Ireland to make the travel time more balanced.

As far as the flights, I see that flights to/from Ireland and Scotland seem to be frequently 30-40 EUR per person, so that seems not so bad. The best price I could find for Grand Rapids to Ireland with good arrival/departure times was through Aer Lingus at \~2200 USD total. The flight I'm likely gonna snag has a 4 hour layover in Chicago. I saw another rate of $890 pp through some other site, but it seemed sketchy so I moved on. The Aer Lingus site wouldn't let us book from GRR to Scotland, so I decided to just set up a round trip through Ireland.

For flights to/from Ireland and Scotland, are those easy enough to just book on the day we decide to fly, or should those be booked ahead of time?

As far as food/lodging, I did some googling and I think we can get away with 50-70 USD a day per person for food, and 75-100 USD per person for lodging. Does this seem accurate?

Lastly, I know I need an ETA for the UK, and an International Driving Permit, are there any other documents we may need for this trip?
