YSK: Obsidian is a really great Notes taking software, and it's free
Why YSK: It has all the features that one may expect from a Notes taking program and maybe more, and its free version work well enough.
I've try a lot of Notes taking program, but not really happy with any, but Obsidian changes this. I love it very much!
You can search for review/tutorial about it on YouTube or the web, but I think it's pretty straightforward (except the "Graph" feature that's new to me), and it has everything that I expect from a Notes taking software.
The free version doesn't have sync/backup to cloud feature, but I just set up the Notes folder inside Dropbox folder and everything works well.

coincidentally I just installed obsidian... I am trying to figure it out when I get a minute!
