Unsure how to go about converting my Open House panel phone Ethernet wiring to a network switch.

The blue Ethernet cabling is used for the phone lines today. It is Cat5 or Cat5e. It seems to be all connected together in one big circuit. Which I guess works for phone lines.
There is also coax and white security system wiring.
I want to convert only some of these to Ethernet RJ-45 ports, while leaving some untouched. Many of the rooms have two jacks, so I figured may as well have both wiring for the home network Ethernet and a land line.
So how would I go about figuring what goes to which rooms, converting only those to RJ-45, but keeping everything else on the phone line system? Is there some kind of tester I can use without removing it all?
Or should I just convert the wall jacks first, then a the panel remove a few wires at a time and use some kind of testing tool for that? And if so what kind of tools are good for that? Presumably I need something connected on both ends to test.
Or is there no reason to keep the phone wiring these days? Should I just convert it all to RJ45? Would that be easier? If I were ever to want land line phones, could I just hook phones up to the RJ-45s? And connect all the phones to a separate switch or similarly device? I honestly don't know if modern "land line" phone support that, or if they still use RJ-11. I assume VOIP phones are possible and could probably go over my home network too with RJ-45.
