Backpacking gear

I’m going to North Georgia (U.S.A.) some weekend in October. I’ve never been backpacking before, what essentials do you recommend for me to buy and what size backpack should I get. Also I’m 5’10” so what fit backpack should I get, cause I’m not sure how they are sized?
