Ideas for a 4wk trip for me 44f and mum 73

Ok so my mum is nearly 74 but SUPER fit, she can walk for hours. And she's restless, needs to be moving all the time. We want to do a big, special trip while we still can. We usually stay within Europe (we live in Scotland), mostly Spain and Portugal but want to do something very different, a once in a lifetime thing. These are my thoughts but happy to hear suggestions on places I might not have thought of:

1. Japan - I spent a year there and LOVED it, I just worry that it's too far for her to go

2. She won't do north America for personal reasons (sorry Canada, I'd give my right arm to go there but that includes you)

3. In Europe we've been to Spain, Portugal, Canaries, Germany, Austria , Greece, Italy, Slovenia, Belgium and Czechia. Ljubljana was a particular favourite of hers, also Potsdam and Dresden. Without her, I've been to Slovakia and Hungary but I don't think she'd love them.

4. African safari - it would be amazing but I worry about the heat and general overwhelm

5. We've been to Hong Kong and Thailand (Bangkok and Phuket). Again, I think the general region may be too far for her. Also, Hong Kong political situation is very different now.

A little about her - she LOVES warm weather, but not roasting (25c is pretty good). She wants to go somewhere new, doesn't like to stay in one place too long, loves walking but more cities and villagey than climbing the Alps. We are not hikers. We have a healthy budget for a once-in-a-lifetime trip but not luxurious.

I feel like I've been pushing for Japan because it was incredible and I know she'd love it. I haven't been since 2010. I'd just love to hear other options that would be a wonderful special trip that might not be so taxing.
