For me, I would probably say Fantaisie-Impromptu, but not because of a technical benefit. Before I learned it, I didn't care too much about piano, and practiced maybe 30 minutes to one hour a day. However, I made it a goal to learn this piece, and over the course of about two weeks I probably practiced five to six hours a day, and ended up learning it (at a decent level) in those two weeks. Since then I've practiced around two to three hours a day, and enjoy piano much more. Funnily enough, I don't care much for Fantaisie-Impromptu anymore. Probably because I spent too much time on it in a short period of time.
