So, I made a really nice simple dessert and would like to share it. And I thought, why not make a thread where others can share their simple recipes, too.

Caramel/Chocolate or Butterscotch Tapioca Pudding.
I was not familiar with cooking tapioca pearls. Word of advice, don't overcrowd the pot or cook too many pearls at once. If you do, use a larger pot. They need space.
And I recommend buying the plain tapioca pearls without any food coloring - because I couldn't see the pearls after a while. Just red goop in water.
Cook the tapioca pearls.
Drain and rinse them.
Now you can do any yummy flavour to make a custard-like pudding.
I made a caramel sauce under 1 minute - butter, half and half or heavy cream, brown sugar. (Had no vanilla extract but put it in if you have it.).
Cook it until it turns into a caramel colour.
You can add corn flour into a bowl of tapioca and pour the sauce in, mix it, then microwave it for 2 minutes. Add a decent amount.
Or you can add corn flour as you're making the caramel.
The pudding should be thick, goopy and sugary!
For a butterscotch flavour add golden syrup, you can buy it at a British grocer or World Market.
British butterscotch sauce is butter, golden syrup, brown sugar and water or milk.
You can also add some cocoa to make it chocolately.
It's very simple and very yummy! If you have left-over tapioca pearls for the next day, then it should take only 5 minutes to add the sauce and heat it up.
I like my pudding thick and goopy, if you want it more runny, use less corn flour or use no corn flour.
I find this easier to do than making custard for 20 minutes. The pearls make it thick, rather than making thick custard without them. #food#drink source
I have about 4 gallons of orange mead going right now and I’ve been wondering if I’d be able to use either the leftover yeast after racking or some of the finished product as a starter for a beer? I’m not sure if it would work but I definitely want to try to make a fortified mead-beer of some sort. Any recommendations on how to go about the process? #food#drink
