Spicy Chicken and Shrimp Skewers with Bell Peppers and Onions
Ingredients (serves 4): 250 g raw peeled shrimp 300 g chicken breast, cut into cubes 1 red bell pepper 1 yellow bell pepper 1 red onion 2 tbsp olive oil 2 tbsp lemon juice 1 tbsp smoked paprika 1 tsp mild chili powder or cayenne pepper (adjust to taste) 1 tsp ground cumin 1 tsp garlic powder or 2 cloves garlic, minced Salt and pepper Skewers (soaked in water if wooden)
Preparation: 1. Marinade: In a large bowl, mix the olive oil, lemon juice, spices (paprika, chili, cumin, garlic), salt, and pepper. Add the chicken cubes and shrimp. Mix well. Cover and marinate in the refrigerator for 30 minutes to 1 hour.
2. Prepare the vegetables: Cut the bell peppers and onion into large pieces so they can easily be threaded onto the skewers.
3. Assemble: Thread alternately onto the skewers: a piece of bell pepper, onion, chicken, shrimp… and repeat until the skewer is filled.
4. Cooking: On a barbecue or grill pan: cook for 10–12 minutes, turning regularly. In the oven: 200°C for 15–18 minutes, turning halfway through. In an air fryer: 200°C for 10–12 minutes. Tip: Lightly brush the skewers with the remaining marinade before cooking for even more flavor.
