ELI5: If a signature can basically be a scribble, how is it actually used as proof?

Signatures are used for a lot of things.. My signature has changed/devolved a lot over the years, sometimes to the point where I sign things differently each time. So what actually separates someone changing their own signature from someone else just copying or falsifying it?

Why is it the norm for things? When I sign important documents like mortgage, is there some “official signature” on file that it’s compared against and does anyone check it? basically if signatures naturally change over time, how can they reliably prove who signed something..
