Where to go in January?

Hi,

I’ve just managed to get two weeks of vacation time on short notice to take in January.
The only question is: where to go?

I was thinking about the Lycian Way or the Camino de Santiago route around Bilbao.

Are either of these destinations feasible in January?

Or do you have any other suggestions within Europe? I’m based in Germany.
