Dorie Greenspan has two recipes in her Dorie’s Cookies cookbook for cookie bases that can be split and used for 4 different recipes each. For example the same dough can be used for a chocolate poppy seed cookie, double ginger crumb cookie, regular vanilla cookie, or a spice cookie (just depends on what is mixed in “after”). In fact the base recipe says to split it 4 ways and each variant calls for 1/4 of the base recipe. My question comes from each of the 4 variants (per recipe) calling for the cookie dough to be freshly made before adding in the extra ingredients.
I’m curious if anyone has an idea if I can make the initial dough, split it 4 ways, and then freeze the portions I’m not using until a later date. My real concern is whether I would be able to mix in the extra ingredients for the specific recipe variants well enough after thawing.
Has anyone done something like this before? Would I just need to make sure the dough is brought back up to room temp? Would it even work well?
