Serve immediately with extra pepper.
Substitution: use unsweetened oat milk instead of almond milk. Optional: add chili flakes, garlic powder, or dried Italian herbs if you have them.

You’ll need: 700 g boneless chicken, cut into thin strips; 6 eggs; 250 ml milk; 2 tbsp oil; 1 tsp salt; ½ tsp pepper; and 60 ml water.

Pour in the water and add the ramen seasoning if using. Bring to a gentle boil. 3. Add the noodles and enoki. Simmer according to the noodle package directions, loosening the noodles as they cook. 4. Stir in the leafy greens during the final minute. Taste and adjust with a little salt and pepper.
Substitution: sliced chicken can replace the beef; cook it thoroughly to 74°C. If you use different mushrooms, slice them thinly so they cook quickly. What leafy greens did you add?
