Raspberry Mille-Feuille

Super happy with how this ended up turning out! Was very worried about the assembly but it honestly wasn’t that bad.

It’s a raspberry mille-feuille, consisting of puff pastry, vanilla crème diplomate, raspberry cremeux and raspberry coulis.

Worried about the assembly? Forget about it. That mille-feuille came out gorgeous.
