The Extent of Sebastian's Remorse

You watch this as a kid, you think Sebastian is merely realizing that he shouldn't have squealed on Ariel.

You watch this as an adult, you realize Sebastian is reckoning with the fact that he planted the seeds for Ariel's suffering and King Triton's disgrace.

When the sea-king doubted his approach to disciplining his daughter, Sebastian, whose pride had been wounded from Ariel being a no-show at his concert, urged him to double down and insisted that she's being an insolent brat that needs to be put in her place. But when Triton found out that Ariel broke his #1 rule, thanks to Sebastian ratting her out and painting her as disobedient to stay in his king's good graces, he put the crab's theory into violent practice and unloaded all his negative thoughts and feelings – about humans, his daughter's continued defiance – onto her collection.

Thus, Sebastian is just now understanding that he'd inadvertently created a monster and that his selfish groveling led to his princess getting hurt. And it was at the hand of the very guy who ordered him to protect her – her own father, his own king – because he enabled Triton's worst impulses, despite knowing he was a swimming powder keg. And his remorse only intensifies as the story goes on, with Ariel renouncing her father and the sea he rules, striking a deal with Ursula because she feels she has nothing else to lose, and Triton having a massive moral identity crisis that leads to him giving up his crown and trident to his mortal enemy.
