There is a food allergy named 'Alpha-gal syndrome h https://www.mayoclinic.org/diseases-conditions/alpha-gal-syndrome/symptoms-causes/syc-20428608 that can cause life-threatening allergic reactions to red meats in affected persons. When someone tells you they "cannot eat" red meat, pork is not a substitute. Using in in dishes thinking it is not a red meat can have disastrous consequences.
Personal anecdote:
My soon-to-be ex-spouse and I fought over this when preparing dinner for guests one night. She knew a guest not only didn't eat red meat, she knew the guest has Alpha-gal. With that in mind, she bought pork, and planned to make the guest dish using the pork. She swore up and down that pork was a white meat, and when presented with proof, called me an asshole for ruining her dinner menu.
Several of the guests were also unaware that the pork lobby had lied to them, and had them thinking that the color of cooked pork meant it was a "white meat." #education sourcefid
