How are there multiple Galactuses in the comics?

First of all hello everyone I am new ro the comics and have taken a special interest in Galactus. My understanding is that Galactus is a dude named Galan, the last survivor of the 6th cosmos. During the formation of the 7th cosmos Galan turned into Galactus, and I'm pretty sure that this backstory is still canon for the 616 version of the character even now that we are supposedly in the 8th cosmos? But if that is true how are there different versions of galactus in different universes? And don't use the "they are all avatars of a single entity" explenation because one thing we know to be true about Galactus is that he suffers from his hunger and doesn't enjoy his role, but there is a universe with Lifebringer Galactus in it who I believe has beaten his hunger for planets, if he was a part of the collective consciousness why didn't all variants of galactus learn to do that and outgrown their hunger? Galan's role given his origin story seems like a multiverse level job but as far as I can see the Galan we saw in the backstory is the Galactus we see in the 616 timeline, any others that don't resemble him don't really have an origin story? Like Gah Lak Tus from the ultimate universe, that's not even Galan as far as I can tell. I guess what I am looking for is an official canon explenation for how there can be different variants of him? I'm sorry if none of this makes sense.
