Best cutout cookie recipe?

Hello! What are y’all’s best or favorite cutout cookie recipes?

I want to make my friend some dinosaur shaped cookies for their birthday next weekend. I typically only make drop cookies, so I don’t have a tried and true cutout cookie recipe.

I’d really appreciate if y’all would share your favorite rolled and cut out cookie recipes or tips please!
