ELI5:Soda becomes ice from top to bottom slowly after i open the bottle.

I kept my soda(pepsi) in the freezer to cool it faster and forgot it.After an hour it was still in the liquid state.When i opened the bottle it started becoming ice slowly from the top and freezing to the bottom.I find this phenomenon with some sparkling water too.Why does this happen?
