ELI5: If SSRI's are non-habit/tolerance forming, why do you still get side effects when you stop taking them?

I take a generic lexapro for anxiety and when I stopped for a bit I got this thing users call "brain zaps". Anyways since they supposedly don't create a tolerance (which to me implies they have a limited long-term impact on your brain/body), what's going on?
