Help! White, not-too-sweet buttercream alternative for my sister’s wedding cake?
Ever since we were little, my sister wanted me to make her wedding cake. I’d say I’m a decent hobby baker, but in no way even remotely close to a professional or even semiprofessional level so you can imagine the pressure I feel to do my absolute best for her wedding.
I’ve practiced making the cake now and I’m actually pretty happy with the recipe overall, except for the buttercream.
What I have so far: Pistachio cake layers (imagine an almond cake but with pistachios instead) Apple filling with a tonka bean cream cheese frosting Swiss meringue buttercream on the outside
The buttercream is fine, but the couple both don’t really like the very buttery taste and they’re not huge fans of buttercream anyway.
The cream cheese filling is very tasty, but I’m scared it won’t be stable enough to use on the outside of the cake. So does anyone know a good (and easy) buttercream alternative that doesn’t have as much of a buttery taste and also isn’t too sweet? It also needs to be very white.
I’m open to pretty much anything at this point. If you’ve used something that worked well for a wedding cake, I’d especially love to hear about it! Please help, the wedding is in three weeks… also would love to hear any other tips you have for me! #food #drink source
