The darned expiry date on yeast

Hey! How do you guys store dry instant yeast long term? Have tried to make cinnamon rolls only to find the yeast out of date by a few months 😭I have found like 10 packets of out of date yeast 😩. If you guys freeze it does it need thawing before you use?
TIA
