Last Friday, my sisters and my brother were here when, all of a sudden, they looked at the bilimbi tree and decided there were WAY too many bilimbis hanging on it. 😳😂 And just like that, a family mission was born: “We need to pick them!” 😂🧺
So off they went! They picked the bilimbis while I stood there watching like a very important supervisor. 👀🤣 I mean, everyone needs a supervisor, right? 😂
But they didn’t stop there! They came back, cut both ends of the bilimbis, washed them, and chopped them into pieces. By the time they were finished, everything was perfectly prepared for me to make the pickles. Basically, they did all the hard work and left me with the fun part. 🤣🤣
I simply added some sugar and a little vinegar and let everything soak for two days. Now, you may wonder, why sugar? 🤔 Well, raw bilimbi has a very sharp, sour, tangy taste that can make your mouth go, “ Excuse me?! What just happened?” 😂😝 So the sugar helps balance that intense sourness and gives the pickles a much more pleasant taste. 💚✨
Today, the bilimbis were finally ready for the next stage! 🙌 I transferred them into a strainer and let all that lovely liquid drain away during all the day. And tonight, it was officially pickle-making time! 🥒😂
