Recipe: \- 15 cherry tomatoes or 2 medium tomatoes; I recommend homegrown but they don’t need to be \- two large eggs \- one shishito pepper (you can add more if you wish) \- salt, pepper, paprika to taste \- olive oil \- one clove of garlic

Mince garlic, shishito pepper Cut cherry tomatoes in half, or dice medium tomato
Place minced garlic and pepper into a medium pan. Add enough olive oil to coat the base of the pan. Turn to low heat and let simmer. I like to prep my tomatoes as I wait for the aromatics to do their thing.
After about a minute, place chopped tomatoes into the pan. Let simmer for a minute or two before making a space in the middle of the pan and adding your eggs there. Increase heat to medium.
Add salt, pepper, and paprika to taste, as well as any other spices you wish to use. Once spices have been added, cover pan and let the eggs cook until done, about 3 minutes for runny yolk or 5 for solid yolk. To check if they are done, use a spatula to poke the white part of the eggs. They should be solid with no give.
Transfer to a plate and serve! I recommend eating them with toast, so you can make use of all the delicious tomato juice. Happy cooking! #food #drink source
