Grass-fed Tenderloin Steak Over Traditional Alfredo Well just threw this together for lunch and it was amazing, so I thought I'd share. I made some traditional style Alfredo and used Fusilloni for the pasta, some feta, bacon, and a spicy strawberry jam over steak. Was amazing, only thing I'd add next time was some lightly wilted arugula under everything. Here's everything if you want to make it for yourself. 1½ Cups Barilla Al Bronzo Fusilloni (Uncooked) Grated Parmesean cheese, preferably freshly grated 2in thick 4-6oz Tenderloin Steak/Filet Mignon 2 Pieces of Uncured Bacon, either apple wood smoked or no smoke. Sweet Heat Jam Co. Strawberry Heat Jam Feta Cheese in a brine, I used Epiros brand Cooking Instructions: Leave steak out for 15-30 minutes before cooking to let it get up to room temp Bring 6 cups of water to a boil and salt the water. Cook pasta for 10 minutes so it is almost Al Dente. Keep some pasta water. Strain pasta, do not rinse. Melt 2-3 table spoons of butter in the pot. Toss pasta back in and add Parmesean to your liking. Add some pasta water in to thin out cheese to better coat the pasta. While the water is boiling, put 2 pieces of bacon in a pan on low heat to render out some fat, as this will be used to sear the steak. As bacon fat is rendering season steak on all sides with salt, fresh cracked black pepper and garlic powder. Once bacon fat has started to render turn the heat up a little to crisp up the bacon, not to crispy yet. Pull the bacon off and add a ½ a tablespoon of butter into the pan and turn the heat up. Now sear off all sides of the steak, then lower heat and cook until desired doneness. I recommend medium rare, I cooked it to 128°F and pulled it off letting it rest for 5-10 min before slicing As steak is resting, chop bacon into small bits and toss back into the pan, and crisp them up slightly more. Once they are crispped up and the steak is done resting. Warm plate for 30-60 seconds in microwave, then stir Alfredo and put it on the plate. Next slice the steak up and lay it on top of the Alfredo. Followed by spreading a light amount of the Strawberry Heat Jam over top of the steak. Next crumble your feta over the steak and pasta. Finally spoon the bacon bits out of the pan and ontop of both the steak and pasta, along with some of the left over fat and butter. Then enjoy! #drink #food
