I was looking at restaurant price vs retail and found that these are actually less than retail, not even a markup

Most places mark up 2.5x to 3x so seeing the restaurant come in under retail is kind of confusing. Anyone know why a restaurant would do this? Is it old allocations they bought cheap years ago and never repriced, or are they just using a lower wholesale cost as the base while my retail numbers are secondary market? Trying to figure out if I'm comparing the right things or if these are just genuinely good deals. #food #drink source
